"I love inexpensive cuts of fish. Unlike inexpensive cuts of beef, which are all the rage, the fish doesn't take 3-6 hours to cook and make palatable. I also don't freak out about cooking them one minute too long and ruining a $30/pound piece of fish. These are the easiest for weeknight dinners. I cover them in a lemon pepper rub and fry them up in under 10 minutes. They're awesome."
